Melissa Miller, executive chef at SAP, sits for an interview about Bon Appétit Management Company’s cage-free egg policy, then demonstrates how to cook a simple omelet. Directed by 4SP Films for the US chapter of World Society for Protection of Animals, the short video is intended to inspire other corporations to go cage-free in their egg purchasing.

National Farmworker Awareness Week, hosted by the Student Action for Farmworkers (SAF) and cosponsored by Bon Appétit Management Company, is quickly approaching. March 24-31 is a week dedicated to raising awareness about farmworkers and the conditions they face as participants in a food system focused on keeping prices lower at any cost.

This Saturday, February 16, join thousands of “foodies,” “farmies,” and leaders in food and farming in watching the TEDxManhattan: Changing the Way We Eat conference. Bon Appétit is very honored that Maisie Greenawalt, our vice president of strategy, was selected to present. During the third session, Empower, which starts at 4pm EST, Maisie will speak frankly about “How the Humane Sausage Gets Made” — how a large corporation like Bon Appétit decides to tackle animal welfare issues, and what specific challenges we face in meeting our aggressive deadline of 2015 to end all purchases of pork raised without gestation crates.

This Thursday, February 5, at 6pm, Stanford University will show American Meat followed by a panel discussion, moderated by Graham, that includes Maisie Greenawalt, Vice President of Strategy for Bon Appétit Management Company

Missouri was the first stop in the 10-state Young Farmers Screening Series for American Meat, a documentary that looks evenhandedly at both the industrial and the pastoral sides of the U.S. meat system. Bon Appétit at Washington University in St. Louis, MO, kicked off the screening with a grass-fed beef barbecue for 325 attendees, who stayed for a panel discussion and special announcement.

Bon Appétit Management Company was founded in 1987, by two food service industry veterans — CEO Fedele Bauccio and President Ernie Collins, later joined by COO Michael Bauccio — who had a vision of different kind of company. They set out to bring restaurant-quality food to corporations, universities, and specialty venues. Pizza is the No. 1 food among college students. What better way to get them cooking than teaching them how to make their own perfect pies? At Carleton College, Bon Appétit Sous Chef Gibson Price and the FireBellies student cooking club partnered up to practice DIY pizza making — from the dough to the sauce. Andrew Yang, class of 2015, joined them to document the culinary adventure.

What’s in our food? Most Americans think we have a right to know — and that means not just calories, salt, fat, and preservatives, but genetically engineered ingredients such as corn and soy. The Bon Appétit Management Company has joined forces with more than 450 consumer, healthcare, environmental and farming organizations, manufacturers, retailers for the Just Label It campaign, which is calling on the U.S. Food & Drug Administration to label GE foods. Last week Just Label It released a new video, directed by Robbie Kenner of “Food, Inc.” and designed to persuade consumers to tell the FDA they agree.
