Recently Melissa Miller, executive chef at SAP, sat for an interview about Bon Appétit Management Company’s cage-free egg policy. Directed by 4SP Films for the US chapter of World Society for the Protection of Animals, the short video is intended to inspire other corporations to go cage-free in their egg purchasing. A second video features CEO Fedele Bauccio and VP of Strategy Maisie Ganzler talking about how Bon Appétit came to be the first food service company to switch to 100% cage-free shell eggs in 2005, the challenges we faced in doing so, and how humane policies translate to the culinary side.
