Transy Team Says “Bon Appétit” Daily to Homeless Guests

Ever since Transylvania University generously offered its practice gym, showers and locker rooms as a temporary shelter for homeless guests at the start of the pandemic, Executive Chef Chris Harris and his team have been feeding about 50 men lunch and dinner daily on the Lexington, KY, campus.

“We are very happy to help out the community in any way we can. When Transylvania came to me and explained what they were doing and asked if we would help feed them, it was an easy yes,” says Chris. And since Chris, Sous Chef Danielle Holeman, and the rest of the Transy team always strive to provide the best food they can to everyone, they’re not just making some PB&Js and calling it a day. That isn’t the Bon Appétit way.

Here are some of the things the Hope Center guests have enjoyed: locally cured and smoked ham ciabatta sandwiches with local greens, tomato, onion, herb aioli, and spicy chow chow; house-roasted turkey breast with smashed Yukon gold potatoes and green beans (above right); house-made focaccia pies with a house salad; and barbecued chicken with roasted corn and baked beans.
