Many of our Northern California accounts rely on Passmore Ranch, one of our Fish to Fork suppliers, for their fresh-fish needs. Michael Passmore and his staff (including manager Dave Kunce, pictured) sustainably raise sturgeon, bass, trout, carp, and catfish near Sacramento, CA. The water pumped into the Passmore Ranch ponds comes from an extremely deep well and is as close to “pristine” as we’ve ever seen in aquaculture.
“Knowing Bon Appetit’s commitment to purchasing quality local fresh fish gave us the confidence to invest in building our own processing plant,” says Michael.
