Michael Bauccio

With more than four decades of leadership in the food service industry, Michael Bauccio is the blueprint of operational excellence.
He began his food service career in 1971 with Saga Corporation’s Education Division, where he rose to senior vice president, responsible for over 250 higher-education accounts. In 1986 Saga was acquired by Marriott, and as division vice president Michael operated 300 dining-services locations for colleges and university, private preparatory schools, and stadiums as well as led field-support staff in the areas of sales, marketing, human resources, and finance.
In 1988, Michael launched Bon Appétit’s Education Division. Among the company’s first clients were the Santa Catalina School in Monterey, CA, and Biola University in Southern California. Bon Appétit revolutionized university dining with a new model that brought in professional chefs to cook delicious food entirely from scratch. Bon Appétit proudly continues to feed students at both Santa Catalina and Biola to this day, along with dozens of other schools around the country.
Following the success of the educational division, Michael took over operation of all Bon Appétit’s business divisions — education, corporate, and specialty restaurants and museums. He continues to drive change and innovation at the unit level, while also directing support personnel in marketing, culinary development, recruiting, and finance. Thanks in part to the outstanding customer-focused operations team that Michael has methodically built, Bon Appétit has been recognized as the industry leader for premier onsite restaurant quality food, coupled with an industry-best 99% client retention rate. Michael’s unwavering commitment to our people and his insistence on maintaining attentive and personal relationships with clients have been integral to our success.
