Warm Cinnamon Apples with Toasted Walnuts and Maple Yogurt

Before-bedtime treats can mess with your sleep, if they’re high fat or high protein. If you’re craving a little something after dinner, try this recipe from our Bon Appétit wellness team chefs — it’s like a warm apple crisp, only better for you!  The warm apples provide carbohydrates, Greek yogurt’s protein stimulates tryptophan production, and the walnuts contain sleep-inducing melatonin. In the summertime, feel free to substitute peaches, blueberries, or cherries to enjoy the flavors of the season.

Ingredients

1 ounce walnuts
1 medium apple, sliced or chopped
1/2 teaspoon cinnamon
2-3 tablespoons water
pinch salt
1 teaspoon maple syrup
2 tablespoon plain Greek yogurt

Heat a dry skillet over medium high heat. Toast walnuts, stirring constantly, until fragrant, about 2-3 minutes.  Remove from heat and set aside.

Place apples in the pan, sprinkle with cinnamon and salt, and toss to combine.

Add water to cover the bottom of the skillet. Bring to a simmer over medium high heat, then lower the heat and cook until apples are soft and mixture thickens.

Stir together maple syrup and yogurt until well combined.

Transfer apples to a serving dish, top with maple yogurt and toasted walnuts, then drizzle with any liquid from the pan.
