Recipe: Home-Popped Popcorn with Smoked Paprika and Nutritional Yeast

IMG_2590Popping popcorn on the stove is a surprisingly easy and fun way to keep yourself fueled right. This recipe tops the whole grain snack with flavorful smoked paprika and nutritional yeast, rather than the artificial and unhealthy ingredients in microwave popcorn. Makes 12 cups popcorn, or about 4 servings.

  • 2 tablespoons olive oil, divided
  • 1/2 cup popcorn kernels
  • 1/8 teaspoon salt
  • 1-1/2 tablespoons nutritional yeast
  • 1-1/2 teaspoons smoked paprika

IMG_2583Heat 1 tablespoon of olive oil and popcorn kernels on medium-high heat in a pot that is large enough for kernels to be in a single layer. Cover pot.

Once kernels begin to pop. Gently shake the pot by moving it back and forth until the popping slows to 5 seconds between pops.

Turn off heat. Drizzle popcorn with remaining olive oil and toss with salt, nutritional yeast, and smoked paprika.
