Supporting farmers and workers both locally and globally
On Valentine’s Day 2011, Bon Appétit announced a partnership with Cordillera Fair Trade Certified™ chocolate. The kitchens of many of our 400-plus cafés across the country began stocking it, baking with it, developing recipes for it, and informing our guests about what distinguishes it from other chocolate. We are proud to be the first food service company to support the use of Fair Trade baking chocolate companywide.
Cordillera Chocolate is an exceptional blend of the very best Criollo and Trinitario cacao beans grown in Colombia. It is unusual in that it is made from beans not only grown in Colombia, but also processed there. (Most beans are shipped elsewhere to be made into chocolate.) Cordillera’s single-origin combination creates better traceability and means that not only do the cacao farmers receive a more favorable price for their beans, but more of the Fair Trade premiums remain in the community: Colombia as a whole receives more of the value of each bean.
All of our chefs’ creations, from vegan brownies to elegantly decadent chocolate cakes, benefit from the inclusion of Cordillera’s sophisticated flavor and smooth meltability. We are proud that each delicious bite helps improve the lives of Colombian cacao farmers and chocolate workers.
