Executive Chef, Gallaudet University

Mary is from Monroe, LA, and “was into local way before local was cool — we didn’t eat anything we didn’t catch or kill ourselves.” Before joining Bon Appétit in 2005, Mary ran her own restaurant in Baltimore: “I would always buy from the little guy, but there were far fewer to choose from.”

Since then, the interest in local food has just exploded, she said. Mary’s been our executive chef at several education accounts in the area and helped set up Farm to Fork vendors for our new client, Lafayette College in Pennsylvania. She is currently the acting executive chef at Gallaudet University in Washington, where she avidly harvests from the campus farm — just a short walk from her kitchen.
