Usually when people think of food pioneers in the Bay Area, they recall restaurant owners like Alice Waters and writers such as Michael Pollan….The fact that Bon Appétit is a large, for-profit corporation means that Bauccio often doesn’t get credit outside the industry for being a trailblazer. But let me tell you: His impact on the local-sustainable movement is big.
